Coconut Almond Hot Cocoa


In case you haven't noticed on Instagram, it is snowing in our neck of the woods and pretty much everyone else's. If I were a mom who watched the morning news everyday, I would have known that it was supposed to snow all day today, and I wouldn't have tried my odds at winning a game of food staples roulette. My bet was off, and this morning we were out of yogurt (essential), eggs (again, essential) and diapers (extra essential). So myself and the little ones bundled up and headed out to four stores today to plow through some errands. Chris helped me to create my plan of attack, and it actually wasn't too bad. Ryan even carried my basket for me in Hobby Lobby and didn't run off. Maybe it was because my expectations were pretty low? 

Okay it didn't go perfectly as you can see I didn't bag my groceries inside of the super fancy store I go to. Ryan was the warden of the cart.

Anyway, even though it was a decent time, I wanted to make up for it this afternoon by doing what we should do when the snow is falling and what Ryan requests often and I nix just as often: drinking hot chocolate!

This is my version of the treat my best friend brought me last month, dark chocolate covered coconut almonds. They were the perfect (secret) snack when I rolled out of bed at the crack of dawn to spend some quality time with Ryan.

Coconut Almond Hot Cocoa
1 can (about 2 cups) coconut milk (you could use coconut milk in a carton, but I think the canned is creamier so I prefer using it)
2 cups almond milk
3 tablespoons cocoa powder (I used the Hershey's Special Dark Unsweetened Cocoa)
1/4 cup sugar
1/2 teaspoon vanilla

1. Heat the coconut milk and almond milk to almost boiling on the stove.
2. While the milk heats, mix the cocoa and sugar in a bowl. 
3. Gradually add the cocoa mix to the hot milk and stir constantly. Once all the cocoa mix is dissolved into the mix, ladle into mugs, top with whatever you choose (I used marshmallows and toasted coconut) and enjoy!

The flavor was excellent and hit the spot. The marshmallows make it very rich so maybe go a little light on the marshmallows. 

Ryan insisted that we drink our "coffee" at the window looking out at the snow. And I don't know about you, but I listen when someone sporting a chocolate mustache asks something of me.

  1. Yummmm. And I followed your lead into Aldi's the other night. I was a little thrown off by the "no credit" policy (debit pin? what?), but I may be a convert.

    1. Yay!! And yeah, I think the lack of credit card fees helps keep their prices low like no bags, no shelves, only a few employees, quarters for carts, etc. I love Aldi. My bratty little girl self would be so shocked.
