Chipotle for Three for $7.54


Chris is quite a fan of Chipotle. He loves it, adores it, whatever affectionate verb you want to use, it is pretty much always an option for him. Fun fact: our "best friend dinner" in the midst of our how we met story was at Chipotle. It probably stems from Mexican food being his absolute favorite food. I really, really like Chipotle, too (in my prime eating days, I seriously could eat two burritos in one sitting. Chris does not believe me, and the fact that I failed to eat two burrito bowls last December does not help my case. But burrito bowls are more filling at a quicker rate than burritos! I digress, though ... we can discuss Chipotle eating strategies at another time). It is also amazing that I don't have to make the million components that go into a good Mexican/Tex-Mex meal. I really enjoy cooking (well, I used to, now I'm still learning to enjoy it with a third leg via a toddler), but let's be honest, making meat + pico + guac + refried beans + chopping and shredding other stuff = a lot of steps and a whole lot of dishes. 

Now we don't have the budget to throw all of our money at Chipotle so spending $13+ on two burrito bowls adds up quickly. But! Last week, I learned that you can order a side of rice for $0.80! I know rice is much cheaper than that at home, but remember, we are going for a no dishes meal here. And I loooove their rice. Now we can easily feed the three of us food-eaters for $7.54 when we decide to treat ourselves to Chipotle. 

Here's how:
- 1 veggie burrito bowl $6.25
- 1 tortilla that comes with the burrito bowl, just ask for it on the side!
- 1 side of guacamole that comes with the veggie option
- 1 side of green salsa, which is Chris' favorite. This is for no additional cost also since you can ask for more than one scoop of salsa on your burrito or bowl anyway!
- 1 side of rice. $0.80

All of that plus tax adds up to feeding the three of us for $7.54, which is not too shabby for a fast casual establishment that has us hooked by the taste buds. Since Chipotle's portions are so big, we can all split it, and it is really enough food as long as you don't have someone new on the line that skimps.

Five Favorites, Volume Three


1. 2013 Collegiate Rugby Sevens Television Ad. We have been loving this because my brother-in-law, Brad, is the rugby player scoring a try at the two to three second mark. I call him my big-little brother since he is younger than I am by eight months, but about eight inches taller. The footage came from last year they played each other when Notre Dame played Cal...quite the family rivalry, no? Here is a clip from last year's television interview!

2. "Ho Hey" by the Lumineers cover on Nashville. Ever since I graduated from collage, I have a bad habit of watching mindless dramas while I clean or if I have to do busy work. My roomie, who is from the land of Loveless Cafe and Pancake Pantry, got me started on Nashville, and I have fallen into the abyss of its crooning ways. Both of us are in love with this scene when the star's daughter get to sing one of my favorite songs at the moment on stage. And since I'm pregnant, I tear up while watching it even though no sane person should.

3. Queso, hold the Velveeta. We watched the Blue-Gold Spring Game from home because we are wimps as I mentioned here, and we are pretty lucky that it was broadcast on NBC. I was craving brats, and Chris was craving queso, which we normally make with Velveeta and Rotel. Yum! Except that we are supposedly eating "healthily" right now so eating the rarely expiring Velveeta didn't seem to fit the requirements (because brats do?!...I was holding the pregnant craving trump card). So I searched for a slightly better (is lots of cheese and sour cream really better?) recipe that turned out well! I used pepperjack cheese instead of cheddar to make it a bit spicier.

4. Louis Nix at quarterback. Speaking of the spring football game, have you ever seen a 300lb+ man line up at quarterback and score? Look no further, my Irish loving friends. Ryan high-fives every time he sees it, mostly because he sees a football, but some day he will understand.

5. Take Them a Meal. One of my friends here is South Bend just gave birth to a sweet baby girl! Of course, she and her husband will want to focus on their two little ones rather than make dinner so many of us asked to be put on a meal list. When I was helping my mother-in-law, many people generously brought food over, but a few times there were multiple people who gave meals on the same night. I was so impressed when I received an email from Take Them A Meal. The group organizer can add all the people who volunteered to cook, everyone can see what dates are available, reserve a date, see what everyone else is cooking to avoid repeats and know of any dietary restrictions. Smart idea.

Bonus...What is everyone's favorite mascara? Mine is pretty much out, and since it smudges even though its waterproof, I am all ears (eyelashes?) for your favorites. I have short, straight eyelashes that I inherited from my mother so any help is appreciated!

The Birth of a Cookie Monster

Ryan has been spewing first syllables left and right with the spot-on perfection only a parent could understand. "Buuuh," "Baaa," Baaaaaaa," and "Boooo," are all actually different words in the colloquial language of RDH, and now he has added the hard c to his repertoire of consonants. 

This morning, I whipped up some coconut macaroons, Nat the Fat Rat style, because well I am in a coconut hut rut. I'm not kidding...I was eating sweetened coconut flakes out of the bag last night. Weird? Definitely. Delicious? Definitely again. Ryan watched me form the macaroons on the cookie sheet all while frantically quacking, "Kuuuk-keee," and desperately reaching to try to swipe some batter. Then he squatted outside the oven watching the sweets bake and occasionally chanted, "Kuuuk-kee! Kuuk-kee!," like those little mounds of coconut were in the race for gold. Nope, just trying to reach the golden brown at the tips, but thank you for your enthusiasm, little one! Finally, it was time. The time my cookie fiend had been waiting for: taste testing. Want to see it? Well then, you are in luck because I documented it on video, of course. My favorite part is when he is taking the cookie from me, makes eye contact and then lets out a mischievous and satisfied sigh. Thank goodness I love baking, we have a monster on our hands.
